Wildlife/Bird Location Recommendations

I was in Tanzania in May in 2018 and it was too cold to swim. I was surprised. I was more interested in animals than birds but we saw plenty of birds One day in Tanzania
Loved your blog, Rosalie! The baboons can get aggressive, I imagine. The rhesus macaques in parts of India are similar. They have been so habituated with associating humans with easy edible pickings that they have lost a lot of their natural fear.
 
If you could go during our "winter" (lol), say Jan through March, then the wetlands in Florida would be exactly what you are looking for, and would have tolerable temperatures. And the birds are nesting en masse right now, too!

Right now here in East Orlando it is 80 deg F, or 27 deg C, and we've had cooler days throughout January and so far into Feb. In May, the Orlando area gets up to 90 deg F, or 32 deg C, on average - but it will often be cooler at the coast (e.g. Cape Canaveral Wildlife area, or the beaches for shore birds - average temps there in May are 82 deg F, or 28 deg C). And some days will be cooler, and some warmer, of course.

The wetlands around Vancouver / coastal BC sound like a good suggestion for you, though!
 
I am a little late to this, but if you can go earlier than May (say March or early April), then Huntington Beach State Park in Murrells Inlet, SC is a great place to bird watch. It's also great in the autumn. If you go in May, though, it probably will not meet your temperature requirement.

+1 on Huntington.

When staying at Murrells Inlet a few years back, we spent two very early mornings doing wildlife and birding photography at Huntington. December mornings brought temps between 30ºF to about 40º a few hours later. Even then, it was mostly populated by birders in the wee hours. A hurricane came through a couple years ago and knocked out many of the boardwalks, but since the large birds are everywhere and along the coast, there should be plenty of spots to capture them.
